Recipe: Sticky Toffee Pudding

One of the highlights every Christmas in Realtor Carolyn Hamilton’s house is sticky toffee pudding. This recipe, from her great aunt in Prestwick, Scotland, is a staple in her household every season and begs to be shared with others who have a sweet tooth.

Sticky toffee pudding ingredients: 6 ounces dates, stoned and chopped 1 level tsp bicarbonate of soda (baking soda) 2 oz butter 6 oz castor sugar 2 eggs 6 oz self rising flour 1/2 tsp vanilla essence

Sauce ingredients: 7 oz soft brown sugar 6 tablespoons double cream 4 1/2 ounces butter 1/2 teaspoon vanilla essence

Whipped cream or vanilla ice cream for serving

1. Pour 1/2 pint water over dates and bring to a boil. Remove from heat. 2. Add bicarbonate of soda (baking soda) and leave to stand. 3. Cream butter and sugar, add eggs, and beat well. 4. Fold in flour. Add dates and essence. 5. Bake at gas mark 4 (350°F) for 30-40 minutes. 6. Mix sauce ingredients, bring to a boil, and simmer for 3 minutes. 7. Pour a little of the sauce over pudding, put back in oven to soak in, and bubble until golden brown. 8. Pour sauce over pudding when ready to serve and top with whipped cream or serve with ice cream.
